The geographical area of Assisi d.o.c. it falls in the central part of Umbria, in the province of Perugia, and includes a medium hill area, located at the foot of Mount Subasio. The production area of Assisi d.o.c. wines it includes part of the municipal areas of Assisi, Perugia and Spello.

PRODUCTION AREA: Environs of Assisi, Ponterosso grounds, Cavalcabove grounds
SOIL: Medium consistency, clay and layers of limestone
ALTITUDE: Between 218 and 240 metres above sea level
VINEYARDS: Vineyards grown in cordon, 4570 stumps per hectare
CLIMATE: Harsh winters with fresh springs and hot, humid summers
HARVEST: Manual at perfect ripening
WINEMAKING PROCESS: Traditional removal of grape stalks, pressing and maceration at the controlled temperature of 25°/28°
MATURATION: Stainless steel tanks at a controlled temperature and aging for 6 months in second and third passage barriques.
ALCOHOL CONTENT: 13% vol.
TASTING: Colour: Ruby red
Scent: Vinous, Characteristic
Taste: dry, full-bodied, harmonic, intense and persistent
